Pasta in Vodka Sauce

Pasta in Vodka Sauce

Serves: 8

Cook time: 5 min­utes

Prep time: 30 min­utes

1 pound penne or ziti pasta

1 small onion, finely chopped

1 28-ounce can crushed tomatoes

1/4 cup vodka

3/4 cup heavy or light cream

Pre­pare penne accord­ing to pack­age directions.

Mean­while, in a large, well-oiled skil­let over medium-high heat, sauté onion for 5 to 6 min­utes or until translu­cent. Add toma­toes, reduce heat to medium and sim­mer for 20 minutes.

Add vodka and sea­son (with salt and pep­per) and cook for 1 to 2 min­utes. Add cream and cook just until heated through. In a large bowl, com­bine drained pasta and sauce.
