Pasta in Vodka Sauce
Cook time: 5 minutes
Prep time: 30 minutes
1 pound penne or ziti pasta
1 small onion, finely chopped
1 28-ounce can crushed tomatoes
1/4 cup vodka
3/4 cup heavy or light cream
Prepare penne according to package directions.
Meanwhile, in a large, well-oiled skillet over medium-high heat, sauté onion for 5 to 6 minutes or until translucent. Add tomatoes, reduce heat to medium and simmer for 20 minutes.
Add vodka and season (with salt and pepper) and cook for 1 to 2 minutes. Add cream and cook just until heated through. In a large bowl, combine drained pasta and sauce.
